Strawberry picking is a yearly tradition and this year did not disappoint! The hard part about having four kids is making sure that everybody does NOT fill their bucket up to the top. I found this out the hard way one year when my total came to almost $50! So we had to institute a new rule that  we can only fill our buckets up halfway! We have a strawberry field about a mile from our house and we absolutely love that we can drop in whenever we like and go searching for the perfect, sweetest strawberries.
I received a Pie Provision mix in my swag bag from the Pinners conference so I thought I would give it a try! I usually just use a frozen pie crust from the grocery store. You just can’t beat it! Super easy and super yummy!
Aren’t these gorgeous? We love to have a contest to see who can find the biggest strawberry and who can find the craziest looking strawberries! This strawberry definitely won the crazy category!
Because we were using the pie mix, that needed to be prepared first so it could sit in their fridge for a few hours. After the dough was done I just placed it in my pie plate and baked it at 350 for about 20 minutes. While it was baking I got started on the best part. The strawberry filling! This recipe is so easy! All you need is strawberries, cornstarch, sugar, and strawberry gelatin. That’s it!!
In a small sauce pan I combined 3 tablespoons of cornstarch, 1 1/2 cups of sugar and 1 1/4 cups of water and brought it to a boil until it thickened. I then added 3 tablespoons of the strawberry gelatin, stirred it and set it aside to cool. Once the gelatin mixture and my pie crust was cool I filled my pie shell with 2 cups of sliced strawberries and then poured the yummy gelatin over the top. Into the fridge it went to set and before long we had a beautiful strawberry pie!
Why is the first piece always so hard to cut?
Seriously so yummy! But the best part was the little hands that helped me pick the strawberries and bake the pie! Enjoy my sweet friends!

Recipe
3 T cornstarch
1 1/4 cups water
1 1/2 cups sugar
3 T strawberry jello
2 cups sliced strawberries
1 baked pie crust
Bake pie shell according to directions and cool. In a small saucepan combine water, cornstarch and sugar until thick and boiling. Mix in jello and cool. Once mixture is cool add the sliced strawberries to the baked pie crust and top with jello mixture. Place in the refrigerator to set. Enjoy!
